Parmesan Baked Pasta

MeasureIngredient
1 tsp.olive oil
1 lb.Italian-style poultry sausage, removed from casings
3 cupsprepared marinara sauce
1/2 cupred wine
1 (6 oz.) canCalifornia Ripe Olives, halved
3/4 cuplow fat ricotta cheese
1 (1 lb.) pkg.whole grain penne pasta, cooked
1 cupshredded Italian cheese blend
1 tsp.chopped oregano
Directions:
Heat olive oil in a large sauté pan over medium high heat. Stir in sausage and cook for 5-6 minutes until browned and cooked through. Pour in marinara sauce and red wine and bring to a boil. Turn heat down to simmer and cook for 4-5 minutes. Remove from heat and stir in 1 cup of California Ripe Olives and ricotta cheese. Toss with pasta and pour into a 3 quart casserole dish. Top with cheese and sprinkle with oregano and remaining California Ripe Olives. Bake in a 400°F oven for 20 minutes until golden brown and heated through. Serves 8.
