Parmesan Baked Pasta

| 1 tsp. | olive oil |
| 1 lb. | Italian-style poultry sausage, removed from casings |
| 3 cups | prepared marinara sauce |
| 1/2 cup | red wine |
| 1 (6 oz.) can | California Ripe Olives, halved |
| 3/4 cup | low fat ricotta cheese |
| 1 (1 lb.) pkg. | whole grain penne pasta, cooked |
| 1 cup | shredded Italian cheese blend |
| 1 tsp. | chopped oregano |
Heat olive oil in a large sauté pan over medium high heat. Stir in sausage and cook for 5-6 minutes until browned and cooked through. Pour in marinara sauce and red wine and bring to a boil. Turn heat down to simmer and cook for 4-5 minutes.
Remove from heat and stir in 1 cup of California Ripe Olives and ricotta cheese. Toss with pasta and pour into a 3 quart casserole dish. Top with cheese and sprinkle with oregano and remaining California Ripe Olives. Bake in a 400°F oven for 20 minutes until golden brown and heated through. Serves 8.
