Spicy Rancher’s Sandwich

MeasureIngredient
1 tsp.olive oil
1 largeyellow onion, peeled and thinly sliced
1jalapeno pepper, sliced
3/4 cupsliced California Ripe Olives
2 tbsp.chopped cilantro
8 oz.thinly sliced grilled tri-tip or sliced roast beef
1/4 cupprepared barbeque sauce
4whole grain buns, split
Directions:
Heat oil in a medium sized sauté pan over medium heat. Add onions and cook over medium low heat, stirring occasionally, for 10 minutes. Add jalapenos and continue cooking for another 5 minutes until completely tender and caramelized. Stir in California Ripe Olives and cilantro, remove from heat and set aside. Toss tri-tip in barbeque sauce and set aside. To assemble sandwich, place 2 ounces of tri-tip on the bottom half of each bun. Top with caramelized onion, olive mixture and cover with remaining half of bun. Serves 4.
