Spicy Rancher’s Sandwich

| 1 tsp. | olive oil |
| 1 large | yellow onion, peeled and thinly sliced |
| 1 | jalapeno pepper, sliced |
| 3/4 cup | sliced California Ripe Olives |
| 2 tbsp. | chopped cilantro |
| 8 oz. | thinly sliced grilled tri-tip or sliced roast beef |
| 1/4 cup | prepared barbeque sauce |
| 4 | whole grain buns, split |
Heat oil in a medium sized sauté pan over medium heat. Add onions and cook over medium low heat, stirring occasionally, for 10 minutes. Add jalapenos and continue cooking for another 5 minutes until completely tender and caramelized. Stir in California Ripe Olives and cilantro, remove from heat and set aside.
Toss tri-tip in barbeque sauce and set aside.
To assemble sandwich, place 2 ounces of tri-tip on the bottom half of each bun. Top with caramelized onion, olive mixture and cover with remaining half of bun. Serves 4.
