Golden Breaded Cod

| 4 (5 oz.) fillets | boneless, skinless cod |
| 1/2 cup | plain bread crumbs |
| 1 tbsp. | olive oil |
| 1/2 cup | white wine |
| 1 tsp. | chopped lemon zest |
| 2 tbsp. | salted butter |
| 1 lb. | asparagus, cut into 2-inch pieces and blanched |
| 3/4 cup | California Ripe Olives, halved |
Coat fish in bread crumbs and set aside.
Heat oil in a large high-sided sauté pan over medium-high heat. Place fish in pan and cook for 3-4 minutes until lightly browned. Flip to other side, add white wine and lemon zest and bring to a boil. Turn heat down to simmer, cover and cook for 4-6 more minutes until fish is cooked through.
Transfer fish to serving plates. Whisk butter into pan and toss in asparagus and California Ripe Olives. Plate with fish and serve hot. Serves 4.
