| Herbed Salmon Lentils |
Provencial Fish Pistou
Ingredients |
| 1 Tbsp. olive oil |
| 4 (6 oz.) boneless, skinless halibut fillets |
| 1 (15 oz.) can chopped tomatoes |
| 1 (4.25 oz.) can sliced California Ripe Olives |
| 2 Tbsp. prepared pesto |
Directions
Heat oil in a large high sided sauté pan over high heat. Season halibut with salt and pepper to taste and place in pan. Turn heat down to medium high and cook for 3-5 minutes until golden. Flip fish over and cook for 2-3 more minutes.
Stir tomatoes, California Ripe Olives and pesto into pan. Cover and cook over a low simmer for 3-5 minutes until heated through and sauce is slightly thickened. Serve fish topped with sauce. Serves 4.

La Fromage Burger
Ingredients |
| 1 lb. ground sirloin |
| 1/2 cup chopped California Ripe Olives |
| 1/2 cup sautéed chopped onions |
| 2 tsp. chopped thyme |
| 1/2 cup grated gruyere cheese |
| 4 whole wheat buns, grilled |
| Dijon mustard, as desired |
Directions
In a large mixing bowl, combine ground beef, California Ripe Olives, onions and thyme. Season to taste with salt and pepper. Form into 4 patties and cook on a grill over medium high heat for 3-5 minutes. Flip burger and cook for an additional 2-3 minutes. Top with gruyere cheese, cover and cook until cheese is melted and burgers are cooked to desired temperature. Serve on grilled buns and garnish with Dijon mustard. Serve with a side of baby greens and ripe tomatoes, rather than fries. Serves 4.

The sun is blazing, the beach is calling and casual attire is de rigueur. All things considered, summertime should be the easiest time of the year to relax, no? And by kicking back, I don’t mean bingeing like there’s no tomorrow (or else, perhaps, there won’t be), but rather looking overseas to the French as a good example. You've probably heard of “the French Paradox”. Here's a culture based on enthusiastic eating and daily drinking, yet they produce some of the healthiest seniors in the world. But the deal is, instead of sitting down in front of a 12-inch platter piled high with fried chicken, these folks indulge healthfully—relaxing over a meal with family, not eating on the run. It’s about enjoyment, not overeating. Quality over quantity.
Translation: Chill out and feed your family right! Enjoy preparing unique foods with interesting seasoning so that you and your family will enjoy every bite. Use foods like California Ripe Olives, peppers and capers that pack a lot of flavor without taking much effort at all. And most of all, never eliminate entire categories of foods like fats or carbs from your diet in the name of good health.
