Smokey Sloppy Joe

Ingredients

1 Tbsp. olive oil
1 lb. ground turkey
1 medium green pepper, chopped
1 1/2 cups prepared chipotle salsa
3/4 cup sliced California Ripe Olives
4 whole grain rolls, sliced

Directions

Heat oil in a large sauté pan over medium high heat. Add ground turkey and peppers and brown for 3-5 minutes. Stir in salsa and California Ripe Olives and cook for 5- 10 minutes, breaking up larger pieces of meat and stirring occasionally until thickened. Season to taste with salt and pepper and remove from heat. Scoop meat mixture onto rolls and serve. Serves 4.  TOP

Popeye Potato Skins

Ingredients

4 medium russet potatoes, baked and quartered lengthwise
1 cup (4 oz.) frozen chopped spinach, thawed and drained
1 cup sliced California Ripe Olives
2 oz. chopped sliced ham
1/2 cup shredded Asiago cheese
1 cup prepared ketchup

Directions

Scoop flesh out of potato skins, leaving a 1/4-inch border, and save for another use. Line potato skins up on a clean baking sheet, skin side down. Combine spinach, California Ripe Olives, ham and cheese. Sprinkle approximately 1 tablespoon of mixture onto each potato skin. Place under a broiler for 3-5 minutes on high setting until golden brown. Serve with ketchup for dipping. Serves 4.

The air is cooling, the leaves are changing and the noisy little neighbors from next door are finally back in school. As far as seasons go, summertime gets most of the credit, but I must admit I do love the fall. And I know I'm not the only one.

How do you get a guy who's all about meat and potatoes to cheer for whole grains and veggies?

With Tivo set for ESPN and the extra NFL Sunday Ticket package hooked up via satellite, I venture to say that there are many men, including my husband, who live for this time of the year! From the first kickoff 'til Superbowl Sunday, we'll fly solo on Sundays while the men in our lives channel surf, scream at the big screen and perform random acts of buffoonery in the name of team spirit. And while all this is going on, you can be sure they'll be downing their favs-chips, wings, nachos, hot dogs.oh yeah.

The grim reality is, when left to their own vices, it's no wonder heart disease, cancer and type II diabetes are pulling our men out of the game before the end of the third quarter. These guys need some serious coaching!

Instead of considering meat, carbs and vegetables separately, try them as a team.So there you have it, "The way to a man's heart is through his stomach." Whether your guy is s a die hard channel surfer, a fair weather watcher or a weekend warrior, the greatest thing you can do to show him (and the rest of your family) you care is to encourage him to eat right and keep his heart and the rest of his body healthy. And let's not just make this a Sunday thing!

 

So how do you get a guy who's all about meat and potatoes to cheer for whole grains and veggies? There's no fool proof strategy, but you can start by subbing lean meats, poultry or fish for fattier cuts, cashing in on crowd pleasers like California Ripe Olives and recruiting a few well paired vegetables and whole grains to complete the plate. With a little practice you'll be sure to score big and your guy will inevitably last through overtime.

Breaking the Meat and Potatoes Habit

If you come from a world where it's not dinner unless there's an 8 oz. slab of beef at the center of the plate, it's time for a new playbook. Relax, you don't have to go cold turkey...Well, maybe not figuratively, but literally it might help. Serve leaner cuts, decease the size of your meat servings and use whole grains and vegetables to satiate the hungriest of appetites.

Instead of considering meat, carbs and vegetables separately, try them as a team. Use 3-4 ounces of sliced, chopped or ground meats per person in stir frys, stews, pastas or sandwiches. When you cook with the bold flavors that these guys can't resist, no one's going to be searching for a fill-in at half time!

Heart Healthy Habits for the Whole Team
Walk, don’t run: Make time for at least one 30 minute walk a week with your partner or the whole gang. It’ll be great for your blood pressure, even better for your relationships.
Go Nuts: Swap out the chips for other finger foods like nuts or California Ripe Olives. High in monounsaturated fats and void of trans fats, these are perfect for picking.
Have Some Class: Sign up for kickboxing, yoga or spinning as a duo. You’ll have a little time on your own and set a great example for your kids while you’re working out.
Complete the Play: Hit the park with the kids, but don’t just sit there and watch. Push ‘em on the swings, swing from the monkey bars or go fly a kite. Now that’s high impact fitness!
Check the Oil: Make sure you’re cooking with monounsaturated fats like olive oil and avoiding trans fats and saturated fats as much as possible.
Veg Out: Eat one meatless dinner a week with the whole family. Fill the meal with bold spices and lots of family friendly foods like California Ripe Olives, and what do you know? Veggies are poised to become the Cinderella story of your table.
