Healthy Family Fare Contest
Whether you’ve got a full house, an empty nest or you’re cooking mostly single servings these days, it’s great to have a few healthy options in your repertoire. And by healthy, we don’t mean low fat or carb free, just simple good food that tastes fresh and delicious because, well, it is. So, we set out on a search for the best family friendly healthy fare out there. As always, with so many tasty ideas, you made our job particularly difficult this time.
Fern's Olive Summer Salsa with Barley

Ingredients
|
| 4 large tomatoes, diced |
1 can chopped California Ripe Olives, drained |
1/2 large onion, chopped |
| 3 cloves garlic, minced |
2/3 cup chopped fresh cilantro |
1 jalapeno pepper, seeded and minced |
2 tablespoons fresh lime juice |
| 1 cup cooked barley, chilled |
salt and pepper to taste |
| 1 large package tortilla chips or whole wheat crackers |
Directions
In a small mixing bowl, combine tomatoes, California Ripe Olives, onion,
garlic, cilantro and lime juice. Add jalapenos 2 teaspoons at a time,
tasting after each addition to see how hot the salsa has become. Mix in
barley and season with salt and pepper to taste. Serve chilled with
tortilla chips or whole wheat crackers. Serves 6 appetizer portions.

We tasted your pizzas and wrapped your burritos, ate some salads and picked at a few entrees. Finally we found a recipe that we couldn’t resist and it was submitted by Frances Esposito of Nutly, NJ. Her "Fern’s Olive Summer Salsa with Barley" was so unique, healthy and scrumptious, we almost forgot that there was still a chill in the air. So she has her seasons a little mixed up, but as far as we’re concerned, her seasoning is just right! |
