So you're not able to fit an overseas trip into your budget this year. Who can? That doesn't mean you can't enjoy the cuisine of far away lands. In fact, we recommend it! Treat yourself with a taste of the sun-kissed Mediterranean by cooking with olive oil and other monounsaturated fats, eating more whole grains and vegetables and lowering your consumption of animal fats. You'll find that your meals taste better and you're healthier for it. Besides, it sure is more economical than the plane flight!
 

 
 

Fish Provençal

  • 2 Tablespoons olive oil
  • 4 (6 ounce) sea bass, halibut or snapper filets, salt and pepper to taste
  • 1 (7 ounce) bulb fennel, chopped
  • 1 medium leek, chopped
  • 1 large (10 ounce) tomato, chopped
  • 1 cup California Ripe Olives
  • 1 Tablespoon chopped thyme

Heat oil in a large sauté pan over medium-high. Season fish filets with salt and pepper, then place in pan and sear for 3-4 minutes on both sides. Transfer lightly browned fish to a clean plate and set aside.

Stir fennel and leeks into sauté pan and cook for 3-4 minutes over medium-high heat until just tender. Turn heat down to medium, add tomatoes and continue cooking for 2-3 minutes until juices begin to release. Stir in California Ripe Olives and thyme, then place fish filets back into the pan.
