Grains Make Belt Tightening a Little Tastier.

Whole grains seem exotic because American's tend to shy away from them in favor of tried and true white rice and pasta. Create pilafs, salads and main courses using wheat berries, quinoa and bulgur to add mystique to your menu without emptying your wallet.

Wheat berries are a favorite because of their mildly sweet and nutty flavor. When cooked properly, their texture is slightly crunchy with a pleasant chew. In other words, they are a perfect canvas for a variety of different flavor and ingredient combinations. Sauté your favorite veggies and toss them in or add to your leftover roast chicken and serve over a bed of greens with some California Ripe Olives on top. Better yet, try this recipe and you’ll open your eyes to a whole new world of flavor.

 

 

 
 

Roasted Wheat Berry Pilaf

  • 1 head cauliflower
  • 1 yellow onion, sliced in strips
  • 1 cup California Ripe Olives
  • 2 Tbsp. olive oil
  • 1/4 cup dried currants
  • 1 1/3 cup wheat berries, cooked

Remove cauliflower florets from leaves and toss with onions, California Ripe Olives and olive oil in a large mixing bowl. Season to taste with salt and pepper then pour (in one even layer) onto a baking sheet. Roast in a 400° F oven for 20 minutes. Return to mixing bowl and toss with currants and wheat berries. Serve hot, warm or room temperature. Serves 4.
